    Spent a week in Eastham right off the bike trail on Kingsbury Beach Rd three weeks ago. We liked the fish tacos at http://www.capecodfinbars.com/ In Orleans. We rented kayaks (4 hr) just down the street from finbar's and went there for lunch afterward. Made for a nice day. best fresh fish...

    The Photo from 2002 is of Rudy winning the SQN auction lot at Hospice du Rhone. The guy just held up his auction paddle until everyone put there's down... The lot went for something around $250 a bottle Wine Enthusiast wanted to publish the shot but Rudy asked to keep it out of the magazine.

    Stupid Brining Question

    I use a 5% salt solution for brining 250g boiling water, 50 g salt then ice to to bring the total to 1050 g of solution once the salt is dissolved I might add some aromatics at that point and maybe some sugar too. if you want to do it quicker use a 7 to 10% solution
