This quote from VLM in another thread reminded me about a somewhat recent article in Eater about operating a restaurant during this pandemic. I thought it was really well done and eye opening (for me anyway). Also, Nari was one of the last restaurants i ate in before this nightmare started. It's a phenomenal restaurant with a terrific wine list.
