Michael, I'm curious, please. Respectfully inquiring, of course -- how would you, with your customary tactful style, comment on the "honor of Ridge Zins"? (Specifically, in this case, the Geyserville [to the extent that it's a Zin], the Pagani Ranch, and the Lytton Springs.)

Thanks as always for anything/everything you might choose to express here on WD.

I wrote up a joke about Eugene Sledge knocking down the door Chez Pete, but was more concerned about the interchangeable canard / rabbit. And Porcini's mushrooms.

And Porcini's mushrooms

Not sure which is worse, TW's apostrophe abuse (ironic, perhaps) or the menu writer's weird double plural "Porcinis" together with the singular "mushroom." And did the dinner budget only allow for a single bolete?

This is clearly a bete noir for you. In this case you are partially correct. The English for Porcino is not Porcino but Porcini mushroom and the plural is Porcini mushrooms (courtesy of the OED).

This was a Mom and Pop production by a long-time, very accomplished French chef and his wife. They are not well educated in English and difficult to understand sometimes. HOWEVER, he can really cook and is a very nice person, even at his old age.

This was one of the better dinners we have enjoyed.

But, because of the incorrect translation, you don't know. I would guess rabbit because it is far less likely that a francophone would have meant duck and have translated rabbit than the reverse. Still these bilingual messes are becoming a regular event.

One wonders what the proper wine pairing for porcupine would be. Does it overlap with wines that go with steamed manatee steaks?

Inquiring minds and all that,
Mark Lipton

One supposes that the seasoning matters a lot (cf. "The Freshman") so if you take both your manatee and your porcupine with herbes de provence then this Cameroon recipe should do the trick: click

Manatee = Minetta

My god, it all becomes clear now! How did I not see it before?
