CWD: 00 Vincent Dancer Chassagne rouge

La Grande Borne -- Premier Cru.

Score another one for M. Rasteau (elder) of the Caveau de Chassagne-Montrachet. This is bright and fresh, with sweet cherry fruit that's firmly short of candied. Good acid backbone with all sorts of tertiary deliciousness peeking out around the corners. A fine match with chanterelles in cream sauce over pasta. Pasta, I might add, that looks more like ears than oriechette do.

Back in the day, I think I paid about $11 for this in Chassagne and checked it on my return flight. Those were the days.

Man, the early season chanterelles have been good this year.
They are not water logged yet and the dryness seems to have concentrated their flavor. We had a chanterelle and parmesan cheese frittata for lunch today.

Chassagne rouge, nice.
