De Moor, Bourgogne Chitry 2007:

After poppping a pouring, this seemed a bit tight. It was clean and clear to the eye, leaving thin trails on the glass. It looks every bit of its 12.2% abv. The nose is orchard fruit and lime skin. On the palate it's more like green apple skin and lemon zest, with some gravel thrown in for interest. Crisp finish, with a healthy Chablis-like acidity playing up the stone and chalk.

Overnight: Wow. Zing. Bam. Holy Tim Leary, Batman. The acid has gone from distinctly young to ripping. The lemon/lime flavors have become much more concentrated. It's almost too much.

It might need to stay in the batcave for a few years.

I've always been a fan of their A Ligoter Tirage de Printemps. You have to be lucky enough to grab a bottle for the 5 minutes it exists at Chambers St. though.

Vintage 59 imported them through about 06. I imagine Joe just turned his well-known charm, and they were helpless to resist. Perhaps it happened on one of the trips when he and Joe Perry were traveling together.

We opened an 05 Rosette several months ago; it was a bit pedestrian day one, day two it was an unusually lovely, nuanced Chablis. Not really a comparison point for 07 Chitry, but, immerhin.

By the way, Joe, if you read this, if you aren't already familiar with the domaine, you should consider checking out Bessin when you are in Chablis again.
 
I had a little taste of the de Moor Aligote this weekend. Wow, it was an eye opening version of Aligote. Really good.

Lose a Breton, gain a de Moor. Life has a balance sometimes.

My company will continue to sell them until the end of the year.

I will continue to drink them after the New Year.
