I find it rather hard to get authoritative vineyard maps, period. There's the Pitiot maps of Burgundy, there's the Masnaghetti maps of (parts of) Langhe and Toscana, and, um, er, what else?
On one of the other fora, I seem to recall someone talking about Google Earth layers for the Cte d'Or. I don't know if they exist, are correct, or have soil information, but you might hunt around for them.
In terms of books, the Traveling in Wine Country series had, for some regions, semi-detailed vineyard maps and soil commentary in the text. Other regions were not so closely-covered.
