vinegar and the mother

do folks here let the vinegar go to completion, rack the vinegar off completely and reuse the mother to start a new vinegar process, or do you take off just some of the vinegar and then keep adding wine to continue the process

art of eating (artofeating.com) no. 68 has a full in-depth article on making wine vinegar at home. they sell back issues and if you really want the skinny, i suggest ordering a back copy from them. (per the article, you don't need mother if you've got access to good 'live' vinegar.)
 
thank you Robert for that tip. i will trudge out to the room in the backyard where these treasures are sequestered.
my question is a bit more specific in that I have made the vinegar, but not sure what to do with the mother that has fallen to the bottom of the jar. i suspect Mr Behr has something to say about this, but I was wondering about other peoples experience.
