Chateau de Beaucastel Chateauneuf-du-Pape '00 -- Dark red with lots of sediment, lots of earth and black fruits, clean bouquet, brambly scents, violets, herbs, quite complex, smooth elegant texture, ultra fine mouthfeel, some tar at the end, no hurry with this trophy.
Excellent with pulled pork, broiled polenta, and green beans (then chocolate cake).
