With roasted chicken
2002 Domaine William Fevre Fourchaume Chablis Premier Cru, alc 13%, crisp apple on the nose... gala apple, pear, hint of butter, a vague yeastiness and a gentle smoothness and creaminess on the palate... not overly rich but not crisp either...no wood showing...reasonable acidity..drinking well... still primary...no premox here... good but not distinguished at this moment in time..

not overly rich but not crisp either

Yeah.

I like the wines and drink them young. They seem to follow a formula and I probably couldn't tell one vineyard from another but whatever . . . I like the wines and drink them young.

Domaine Pinson, too.

Best,
Kay

So far I am not a big big fan of the Fevre regular bottling of Fourchaume. In 2006, where I have made the comparison more closely, the Vaulorent seems a BIG step up from the regular bottling. Otherwise, I am not sure you look to the Fourchaume for crispness, but as I say, the Vaulorent has an impressive structure...

In our 2006 Fevre tasting it was fairly easy to tell most of the various vineyards apart. Whether I could do so consistently blind is another story, but at least I convinced myself that I could distinguish them.

Interesting.. I have 15 bottles 2000-2006 from Wm Fevre but not a single Vaulorent..perhaps I have overlooked one that I shouldn't have
