Beaucastel '89 - always a treat!

Chateau de Beaucastel Chateauneuf-du-Pape '89 -- Medium dark red, exquisite bouquet, earth, leather, miscellany of berries, cinnamon, clean elegant profile, light tannins, so rich, beautiful structure, almost soft power in reserve, ample fruit and balance, wonderful even from a VERY leaky bottle. [E - O]

Paired nicely with baby back ribs, black beans, and mango slices...

In the small version of this picture, you can almost make out a suckling pig next to those bright yellow slices.

Todd, Thanks! Your posting is inspiring (as you surely intended!?!).

No idea if you're being facetious or not...or if Detroit might be nachos-challenged!

Regardless...

Here are just a couple of nachos presentations that come to mind that we might serve down in these parts on crispy tostadas. And, yes, they should go swimmingly with a CNdP...

1) Crumbly cotija cheese, refried beans, and a small dab of Mexican crema; or

2) Light cheddar cheese, shrimp, and (toned down) mango pico de gallo.

Mouth wateringly good...including with a young or aged CNdP!

There would be other equally suitable presentations as well.
