One of my all-time favorite restaurants priced its wines only slightly above retail and made its money on the food.
Moreover, my wine steward friend generously disclosed to me his scheme for keeping track of which wines on his wine list were most worthy. The most worthy wines he priced at $xx.00. The slightly lesser worthy wines he priced on the wine list at $xx.25. Even lesser ones at $xx.50. And the ones bringing up the rear quality-wise at $xx.75.
Very handy knowledge which I applied gratefully.
