I've only had the pleasure of dining with Jay one time, but I think the answer is to include a bottle of well aged Clos Roche Blanche Cot.

While I am honored by the generally accurate responses (I'm actually happier when the gougeres are better than mine - thank you Laura!) I think .sasha was hoping for notes on Jayson's birthday dinner.
