Bill, and rightly so. It is similar to buttermilk pie, chess pie, and the like.



Of course, figuring out what wine to pair with it was a challenge...which challenge was effectively met in this case.

Domaine Vincent Dauvissat Chablis La Forest 1er Cru '14 -- maybe a bit lighter in color than expected, expressive bouquet, apples and other fruits, a bit flinty, power with balance and finesse, tropical fruits nuances, still youthful but drinking well at this time. [E]

We gave a lot of thought and discussion as to what to serve with the crab course and were quite pleased with how the Dauvissat worked out. Is it a Raveneau? No, but still a delight on this occasion.

Pete is quite right about vinegar pie. It exists in a class of recipes known as 'Desperation Pie'. That is, a pie that can be made using only pantry staples. Usually that means an egg custard about the consistency of lemon curd and flavored with anything handy... cider vinegar, molasses, corn meal, etc.
