Nice catch.

Probably not a serious question, but Chef Georges and his wife, Monique, are pure French with very little ability with English, English composition, and Internet communication. The nit you correctly cite probably is FAR beyond their aptitude.

Fortunately, they are very adept with culinary skills if not with composition expertise (or concern). I would be very surprised (and could care less) if that was their only lapse with this menu presentation.

That terrine looks marvellous-a trip directly back to 1974.
I hope you enjoyed the Engel-lovely wines which don't remotely justify their current value.

And, yes, Chef Georges goes way back around here with his cooking...much to my appreciation.

I always consider pulling an old Rene Engel Grand Cru from the cellar to be a special treat. And this 2003 certainly lived up to expectations. It did its part exceedingly well and helped make a truly wonderful Christmas Eve dinner. Too bad that Rene is no longer with us.
