Forgive me but I cannot remember who used to make the brilliant posts about mixing their own wines together from various leftovers that they had, "correcting" them in a way that few would dare. Those were awesome. Well, I just accidently poured half a can of Pfriem Pilsner into a half a glass of Barbale, Kisi-Mtsvane, Exceptional Harvest 2020. I like them both, but damn if the combo isn't a pet-net that could set Ten Bells or Racines on fire.

Well, you've got some vines growing on your property, you're going to need bottles and labels soon. Maybe ones that say Haut-Brion on them. Don't you deserve the best?
 
2017 Quinta do Crasto is a great port and hence a superb corrective. Even works for Champagne - rinse the glass with it and pour in an extra-brut. Voila, a nice Rose Brut NV. A few drops go a long way!
