It's the return of the Lechon Sisig bash! With additional calories from Gougeres, Turon, and many more.

Alas, I could only stay a short time so just a few jots. I've assembled the bottle list from those persistent and pictorial documentarians, Brad, Jayson, Jay, and Sasha.

Camille Saves 1996 Champagne GC "Cuvee Rose" - 60% chard / 40% pinot, unlike the previous two bottles this one is terrific, minerally with a dollop of fruit on top, a great pairing with the sizzled sausage as the minerality in the wine and the saltiness in the pork jump back and forth
J-M Seleque NV Champagne Extra Brut "Solessence" - 50% chard / 40% meunier / 10% pinot, half 2013 wine/half reserve wine, 24 months on the lees, dosage 4 g/l, disg 3/16, and I like it, the pinot meunier flavor is noticeable and lifted up by the chardonnay; a much more serious glass of wine than the Saves
Vilmart 2006 Champagne 1C "Coeur de Cuvee" - Jay reminds me that this wine had a sullen youth but I mostly recall liking this wine

Selbach-Oster 2001 Zeltinger Sonnenuhr Riesling Spatlese - quite potent and fairly sweet, but then the cork taint comes up
J.J. Prum 2021 Graacher Himmelreich Auslese
Falkenstein 2019 Krettnacher Euchariusberg Riesling Auslese 0520
Selbach-Oster 2012 Zeltinger Sonnenuhr Riesling Feinherb "Ur" Alte Reben
Maximin Grunhauser (C. von Schubert) 1997 Kabinett

Der bocksbeutels!:
Weltner 2012 Riesling Hoheleite GG
Hans Wirsching 2021 Iphofer Silvaner Trocken

Baudry 2022 Chinon Rose - an excellent year for this, bright and cheerful
Ch. de Bonnezeaux 2020 VdF: La Minee Haute, Les Coqueries, La Montagne - three separate bottlings but I only tasted Les Coqueries, which is accused by some as being natty but I don't get that; it is very stony, bone dry, but it has a sturdy charm

Clos Roche Blanche 2014 Touraine "Cuvee Pif" - elixir of life, thank you Sasha
Jadot 1998 Bonnes Mares - this was very liqueur-ish with heavy body and strong "red" flavors, fortunately there is also some perfume and talc to vanquish its brooding
Xavier Gerard 2015 Cote-Rotie
Burgaud 2015 Cote-Rotie
Ch. de Pibarnon 2000 Bandol
Birichino 2019 Mourvedre "Vignes Centenaires"
Le Ragnaie 2004 Brunello di Montalcino - not quite open for business
Kalin Cellars 1987 Cabernet Sauvignon...with the coq au vin in it
Ch. La Louviere 1994 Pessac-Leognan

Foreau 1995 Vouvray Moelleux
Ch. Pierre Bise 1997 Quarts de Chaume

I hope others will chime in.

I've never seen a coq au vin recipe that does not use stock as well as wine. Since I've seen recipes with white and even rosé wine, I have no doubt there is one, but why do you seek it? And what does this have to do with Jeff's tasting notelet?

Click the link and delete your post: https://www.genuinefred.com/products/coq-au-vin

And they seem to be in stock at Amazon at a higher price.

Sigh. I, of course, did click on the link. After entertaining the possibility that this was a groaner of a pun made worse by the asymmetrical reference to a recipe, I decided that the best response was a 1flat footed naivete. After all, he might have been asking for information. Should I not take it that you are suggesting that Pavel check out Amazon?
