A chef friend of mine tells of the old adage for making coq au vin: a bottle of Chambertin for the bird and a bottle of Chambertin for the diner. Clearly, this was from a much earlier era when Burgundy pricing was a bit less stratospheric.

Yes, I've heard numerous times that the wine used for food preparation should be of the same quality as the dinner wine.

As you say, Mark, that no longer makes economic/logistic sense to most of us. In this case, I'm quite sure our host didn't let the culinary team get close to ANY of the Burgundies served.

Tom, none of the wines showed any signs of premox. I'm assuming you are asking about the Puligny-Montrachet Les Pucelles '07; regardless, both of the Leflaives were superb. Especially the Leflaive Batard.

The Jadot Batard started off being preferable to my palate as it was smooth and soft. The Moret-Coffinet initially was a bit unyielding but then opened up and became the white wine of the night at this event. The Leflaive was strong and seemingly built for the future very much in a fine style. Three marvelous Batards.

Tom, 07 Leflaive actually have a decent record, relatively speaking. Where our friend got incredibly lucky is with 1996 R.D. . I've been told great bottles exist, but it could be a rumour.

Pavel, a large percentage of the reviews I have seen are very favorable for this bottling. In any event, the folks raved about this bottle (I can't comment as I don't drink fizzy stuff, sadly).
