Advice on Vin Jaune styles

Yes, and for most of the ones up here, you'll want to call ahead. But really, this is what you'll see: goats (or sheep, or cows, or all three), a room you won't be able to enter where they make the cheese, and some finished or semi-finished cheeses in a room. The ones that offer extensive tastings tend not to be the ones you're interested in.

As one of the invitees (OK, so I invited myself) on this Vin Jaune voyage of discovery, I have been checking this thread with a glimmer of interest.

From what I am reading here, Joe ought not to even consider opening these bottles until we are old and gray. And if he insists on such a course, the wines ought to be given a week of air. I also see that we ought to try some young Comte instead of the older stuff. And that we should consider the serving order approach of separating the Chateau Chalon offerings from the others.

At the same time, the sense I get from our intrepid expedition leader is that we ARE opening these wines next week, we are NOT giving them extended air, we are NOT drinking them with younger Comte and we are NOT separating the wines by region.

So, thanks to all who weighed in, but our giddy Captain has seemingly set our course, and I for one am ready to be rather willingly led...

No, we should have young Comte. Maybe I just haven't had the right young Comte or with the right wines. We'll also serve based on vineyard location. As to decanting, if I opened the wines now, I'd drink them all myself. I wait until the night before - especially with the way the weather has been in the North East.

We wont, however, be waiting 60 years. *grin*

Had my wife grab the Comte and a 1998 Puffeney Arbois Vin Jaune - didn't have time this week to get to my offsite and the 99 Macle Chalon.

I think I'm going to decant it at work tomorrow.

The Essex Street (not Formaggio---the other one) Comte is excellent.

If I'm a pretentious asshole for saying so, so be it; but the 4-year-old Comte at Marie-Ann Cantin's shop in Paris is one of the more delicious things I've ever tasted.
 
My apologies for the comt remark. Let me put it this way, I find there is more complexity to the younger comt from the best producers. Finally, that style pleases me the most.
 
All the wines were undrinkable. We ended up getting a case of Pabst Blue Ribbon and calling it a night. If only we waited 50 years...
 
Wait, that was PBR? I just knew Vin Jaune didn't come in cans! No wonder my fingers are still tingling from that damned electric shock "game"--I was too liquored up to know what I was getting into. Fool me once...

I think my hand is still numb too - pretty sure Perry counts the seconds down as you suspected MM.

On the shock-aholic machine, I am sure Buitenhuys coached Perry up--no way he could out-fox us like that on his own! I want a re-match (in hell!).
