Matsutake!

I recently noticed that "Garden of Eden" is carrying hot-house maitake mushrooms, and hen-of-the-woods only rarely. The flavor is not quite the same but it ain't bad in a pinch.

Anyone else had them?

I doubt their hen of the woods were actually foraged.

But the thing to do is to cut them into pieces, toss them with butter or oil, S&P, maybe a little sherry, and roast them in a hot oven until a little crispy around the edges. A very good mushroom.
 
Nice article.....yummy looking final result too in the slide show. So Chinese documentation precedes the mention of Soma in the Rg Veda?
 
Thank you, Joe. I had done that, except in a frying pan, not the oven.

Still very yummy and still interesting texture, too.

Perhaps it's the vicissitudes of memory... I remember my very first HotW so very well and only some subsequent mushrooms have lived up to it.
