Won't the pinot gris try to start up a malolactic fermentation? Is it kept cold like milk?

Seems like a gimmick but I would still love to try the wines.

That sounds really cool. A gimmick, perhaps, but a good one. Unfortunately, I'm well outside his delivery zone, but if I'm ever in Cali I'll look this up.

I think part of the new wave/old wave equation is the wines are better fresh, rather than aged.

Perhaps paradoxically (or not) wines age better bottled fresh.
