Don't know how I managed to avoid trying this before Saturday but did I miss a window of drinkability or something? Not very pleasant at the moment, greatly prefer the regular '07 Pepiere.
 
I had one this past Saturday that was shockingly high in protons, whereas a bottle a few weeks ago was more expressive.

I imagine it's a complicated function of day length, atmospheric pressure, lunar phase and the level of the S&P 500; but I can't be sure.
 
I'm not sure if barometric pressure influences the wine or my ability to appreciate the wine.

It's a huge factor when fishing though. Fishing just ahead of a thunderstorm, when the pressure drops quickly, the fish just go crackers.
 
The Pepieres go through shut-down phases, in my humble experience. Haven't had the 07 yet, but my 06 Briords have just now emerged from just such a shell.

I was very happy to taste this with Marc Ollivier himself and found it most interesting and pleasing, and really, worthy of a photo.

I would doubt that that bottle of wine had any more protons than any other. What it had instead was more hydronium ion, which is quite a different beast, Arjun.

And I would doubt also that it had any more hydronium ions than any other. I would never mistake my tongue for a pH meter.
