Depends on what you are looking for. During the slower summer months, there is a large differential in the amount of people at a given venue, varying with the time of evening and what part of the week we are talking about. Some places close earlier than others.
Like Ten Bells and Terroir are open later than Insieme, Gramercy Tavern, or Veritas, but are not open as late as, say, 'inoteca.
Kind of depends on the vibe you want. Sometimes quiet and personal attention is nice, other times a packed house is nice.
I ask because personally there are times when I wouldn't go some place, and there are times when I would visit that same venue.
Like, for instance, I would never go to Balthazar on a Friday or Saturday night and try to sit at the bar. But on a Sunday night I might prefer to do just that, as Balthazar has a neat and well chosen selection of French wines from which to choose. I would first get some grilled corn and a Cuban sandwich around the corner at Cafe Habana to Go, and then head over to Balthazar and have a bottle of Chinon or some such and finish out a mellow Sunday evening. Attempting the same on a Saturday would be lunacy.
Or on a Tuesday I might go to Porchetta for a sandwich, wander over to Terroir for a glass of Descombes, and then finish up with a cocktail over at PDT or Momofuku Ssam Bar (especially if Don Lee were behind the bar on that evening). But to try the same on a Friday would be havoc, and I probably wouldn't make it in the door of either PDT or Ssam Bar.
So it all sort of depends. Go to the quiet venues on the busy nights, and vice versa, would be my advice.
