For the start of me being the official first employee of Terroir and my lovely wife Em passing her professional engineering exam we cracked open some serious fucking wines over the weekend. I drank a lot, but these were the most memorable:

2006 Phillipe Pacalet Charmes-Chambertin Grand Cru: Cherries buried in mud slathered in nervy acid. Finished like gorgeous desert sunset, long dry and beautiful.

2006 Massa Vecchia Bianco Good orange wines always remind of Christmas, or at least a Christmas kitchen. Spiced plums

2007 Dard et Ribo Pe de Loup More tightly coiled and backed off than the regular Crozes. The olive notes were backed off in favor of a nice earthy spiciness. More syrah should taste like this.

NV Larmandier Bernier terre des Vertus Brilliant nutty flavors and restrained leesiness. Fuck watery champagnes, this is where it's at.

Jacquesson 732 Same as above but with a ashy dry characteristic. I liked the LB more, but this is great stuff.

I also had a 1997 Faively Nuit st. George Hospices de Beaune that was a little heavy handed on the oak and a tad hot.

Which Grand Cru was the Pacalet?
 
The commute will be shit for a little while until we move but well worth it. Slaton, my proper notes are elsewhere, but I will let you know.
 
Sounds lovely. Still haven't tried Pacalet.

When do you start? We need to make your first night on the job memorable.
 
Wow Cory, that's great! Did you know this last Tuesday and neglect to mention it, or had it not been finalized yet? Hell, if it was the former, Sandy still had yet another bottle that we could've cracked open to celebrate...or perhaps not.

If nothing else, a toast is in order tomorrow night.
