2007 Luneau-Papin des Alles VV: assez pleasant night one, though rather tight, hard, and hence non-descript. Night two, after warming up from the 'fridge, better and better, the slightly tough exterior fraying to an appealing tingly acid texture, together with that slightly caramely flavor that aligns good muscadet somewhat with Chablis. Louis/Dressner; good value at $10.
2005 Bessin Chablis: uncorked about 1:30, decanted about 5:00, enjoyed with dinner about 7:00. Just about perfect, interesting sea-breezey, marshy-caramely aromas and flavors, fine balance of body and tenor acidity. This has always been closer to 1er cru than AOC in body and, up till now, it's been too rich to enjoy as Chablis. With early opening and decanting, though, 'twas just right tonight. Kysela; delicious, and good value (for the appelation) at $20.
These two wines made up a sterling 1-2 combo with scampi sauted in a reduced oil/butter/garlic/lemon/wine sauce, served on thin noodles, white asparagus dressed with light mustard sauce on the side.
