what surprised me about this was how much better a match it was with some spinach sauteed in duck fat than it was with broiled skirt steak. I mean really, what's up with that?

Wow, that must be some recipe for a spinach dish or you really screwed up the skirt steak.

Just simply sauteed in duck fat with some kosher salt sprinkled on top. It really brought out the minerality of the wine.

The steak made the wine richer and darker fruited which was good but not as good as with the spinach.

Surprised the heck out of me.
 
We drank the 07 CRB Cab the other night. It disappeared dangerously fast.
Hard to believe that any wine from Cabernet could be so light and graceful.

Unfortunately I drank through my fake cork already so I started hitting the real stuff.

Though as with all such generalizations I can think of plenty of exceptions to prove the rule.

According to their website they only have one bottle left!

Luckily I still have some. Maybe I'll find an auction house to sell it after I drink it up and pour some Charles Shaw Gamay Beaujolais back into the empty bottles.
 
I have found variable quality in my recorked bottles (gee, maybe it ISN'T such a great idea) but the last was just so good.
 
I considered it but the gear is really expensive. Then I read up on metal detectors. Looks like fun but who has the time?

Are you thinking of retiring soon, Joe?
