I had a 2004 Chaillots last weekend and it was delicious. No signs of reduction in my bottle.
I do not believe there is different handling of the 2 cuvees. I saw one fermenter, one decent sized (not large) stainless tank and a bunch of oak barrels. He doesn't have enough stainless tanks to age any significant quantity in stainless, and other than distribution of barrels to wine - there didn't seem to be much variation of treatment available. I tend to look at this as a good thing.
