1998 Jadot Chambolle Musigny Les Amoureuses
Starts off a bit shy but over several hours of air it shows deeper and deeper layers of suave velvet. During some intermediary stages it shows a bit heavy and bulky in the middle but by the end of the night it has the gorgeous firm suave grip that demonstrates why we drink wine!

2000 Denis Mugneret Nuits-Saint-Georges Les Saint-Georges
In the beginning this is a light elegant thread of a wine. Lovely delicate silk that dances across the palate in a very coherent manner. With air it deepens and broadens and at times shows the fuller earthy bass notes that make me think of NSG. At other times it tilts towards soft and cracking up (which I suppose is evidence of the vintage?). But just when I get worried there is also evidence of fine firm tannins and by the end it is gorgeous dark firmish elegant silk. Not a blockbuster wine but it showed a lot of faces and most of them were pretty darn pleasurable. No complaints from me!

1998 Maximin Grnhuser Riesling Abtsberg Sptlese
Smells like what I call the stereotypical cumin-spiced brisk verdant cucumber juice that I identify with Grnhuser. As it is a sptlese the brisk spicy cucumber juice has a golden tint and the flavors are plenty fun (for those who like this sort of stuff). But, the palate tilts dull and doesnt quite dance for me the way the following wine does.

1996 Maximin Grnhuser Riesling Abtsberg Sptlese
Similar flavor profile as on the above 1998, but with a better combination of juicy palate and firm structure. Less of the rusty cumin-spice that was in the 1998 and more of a firm anise/curranty core as well as more of a layered and textured body. This is livelier, more structured, more fun, and much more worthy of drinking. At least for me at this moment. Gorgeous.

2004 i Clivi Collio Goriziano Brazan
Lovely round juicy and firm yellow golden fruits that have just the right amount of succulence and grip and mineral drinkability to go down very quickly with our risotto. I thought these wines were supposed to be difficult when young? Not this one.

2001 Mayr-Nusser Sdtiroler Lagrein Riserva
Porky and berry and bright and light. We also drank this with risotto once the Clivi was empty. Not quite as life-affirming as the easily-gulpable Clivi but for those who like red wine with a bright tart porky berry profile (and I have been known to enjoy that style), this has its charms.

Could you give some other examples of wines with firm anise/curranty cores? Is anise a type of currant?

Lots of cumin around the dinner table! What were you eating, perhaps there was cumin in the food?

Is there a type of cucumber juice that is not verdant? I suppose rusty cucumber juicy might be verdant challenged.

Is there an unbrisk or stale verdant cucumber juice out there?

Is this full earthy sea bass notes or earthy bass like in the musical intrument bass notes? If it is the sea bass, what type of kitchen preparation? If it is the musical instrument, what type of song?

Are there wines that tilt more to treble than bass? Is that good or bad or just a question of personal taste?

5 years old is young? Perhaps on this board...I've always thouht of this as ready to go, or, 'hold-and-drink' in our axiom.

If I understand correctly, these wines are released at least 3 years after the vintage and this 04 is the current release version of Brazan?

But you wouldn't hold onto the 04 much longer? Do you age the other vintages for more time? I remember seeing a lot of positive notes about the 99 with 6 or 7 years of age and people claiming it could continue to age for a while. But, I'm far from an expert on these wines.

I've smelled pork before! (And actually injested small bits as well).
 
I ate a portion of the sandwich on Sunday and it had undefined flavors and seemed unforgiving. I left it overnight on a plate at room temperature, but rebreaded this morning with fresh seven grain bread.

The second day version was so much more expressive and verdant, it was as if I was eating a totally different sandwich!

Everyone is in a rush to eat their sandwiches these days. Have some patience and give the sandwich some time to evolve.

This beautiful pork sandwich had the gorgeous firm suave attack that demonstrates why we eat pork in the first place!

I thought people ate pork because there was no other meat available. That shows how little I know. You are clearly a pork afficianado. Why don't you apply some of your energy and talent to the pork-making process that is slowing down health care reform?
 
Rahsaan, not at all (said the non-observant Jew). Life would be less than it is without bacon, salumi and other things made from that magical animal.

Even a poor pescetarian fool such as I would choose the magical animal before all others, were I to embrace omnivorism.
