Paris Wine Bars

I'm heading to Europe shortly taking in Prowein, some time in Burgundy, the Jura, Beaujolais, Spain and finally, Bordeaux for the en primeur campaign.

My last three days will be spent in Paris and I'd like to hit some wine bars....Racines worth a shot now that Pierre has moved on?....any other suggestions?....Les Fines Gueules, Le Baratin, Le Verre Vole?
