But, this wine made me stop and forced me to post. I opened it Thursday night and it seemed a bit too austere for my taste; very dense and great potential, but not yielding or supple. Vacu-vin stoppered it until this evening, and it's just perfect. Sometimes I've found Stefan's wines to be a bit heavy, but never doubted his ability to get profound flavor into the bottle, and, to be fair, those were from riper vintages (e.g., '03, '05 & '07). This wine is beautiful: orange blossom and peel on the nose with beautiful minerality, like a rain water on rocks; some other haunting white flower/fraise de bois notes floating behind. It is so nimble and yet full in the mouth; just dances around the front, top and back of the mouth; great refreshing, mouthwatering acidity at the end carries the whole thing down the back of my tongue and --when i can resist immediately taking another sip -- lingers for a very nice long time (with that hint of strawberry).
Gosh, these are going to be fun over the next years (decades?) -- assuming the stelvin doesn't screw (ha ha) that up.
