Frank the Tank (or Anfora)

had a great time last night with everyone's favorite scientist frank cornelissen. lots of interesting stuff, but 2 things struck me the most.

1) i asked frank how the journey from sicily to nyc effected the wine, seeing as he doesn't use sulfur. he said that it barely changes the wine at all, and if anything improves it. assuming proper shipping and storage, his contention is that the tannin, high acidity and most importantly high alcohol levels preserve the wine perfectly, making the adding of sulfur unnecessary. remember, these wines range from 14.5 to 16.?? degrees... but do not show it at all.

2) i learned that frank also makes various olive oils -- i should have just assumed this -- and that a vast majority of his production is direct imported into macau by stanley ho! stanley ho is the gentleman/gangster who for years had a monopoly on gambling in macau.
