The 07 Aligote. Really lovely vibrant acids. Quinine, bitters, nice length.

Perfect aperitif with whatever.
 
I opened a bottle of the 08 chablis last week and it was premoxed...old buttered popcorn and caramel. Acrid even. The first bottle was so pristine and mind-blowing..and this was DOA. I was bummed.
 
I don't think it's possible for an 08 to be 'prem-oxed' in the way that expression has come to be used in the past few years. It would have to be flawed in some other way.

I sort of see what you're saying, but if it's oxidized well before it 'should' be then that seems to qualify as premature oxidation.
 
Literally, yes, I agree; but we'd probably also agree that the term has taken on a particular meaning that varies a bit from the literal one.

You mean as something that occurs 5-6 years from the vintage? I don't know that it's really become all that codified and there are still lots of debates about overreporting.
