FWIW, the RG site has a pile of recipes, too.

I think we'll be ordering some of this exotica this weekend, for purposes of scientific inquiry.

I think that's what most people use it for but you can also eat it warm and prepared like a pilaf. My work cafeteria must've had a bunch this week because they served it several ways, most notably cold with grilled veggies and a light vinaigrette and in a rich chicken broth with chicken, carrots, and other typical chicken soup veggies - excellent both ways.
 
Yep, Ian, the RG beans are dried.

And, as Marc said, the cassoulet beans were from RG. They were of course excellent in the cassoulet, but they didn't really get a chance to shine as they do in more simple preparations.
 
We received our bean order on Tuesday and whipped up a pot of Rosa de Castillas yesterday, cooked simply in a crock pot with water and sauteed vegetables, a la the master recipe. The texture of the cooked beans was creamy and voluptuous. They have no flavor to speak of, but served over corn muffins with a bit of salt, salsa, and greek yogurt, topped up with a glass of 2006 Coudert Roilette, they make a tasty, satisfying mid-week repast.

Looking forward to experimenting with some of the more exotic-looking varieties.
