There was an admirably good blog on Vietnam's street food scene a few years back. Not sure if it still exists.

Siem Reap is not very good.

When will you need the info by? Somebody I know may have some info but he's out of town for awhile. Hugh Carpenter cookbook author etc.

In HK I enjoyed the private kitchens at Xi Yan, Yellow Door & Tims. Yung Kee is good for roast goose.

I found some great little hole in the wall eateries by trawling through the archives here..... http://chaxiubao.typepad.com/

And make sure you get to Tim Ho Wan in Mong Kok
 
I think the quality of anyplace you find would be uniformly high, unless you are looking for michelin chefs. Can't beat street food.

That's a mystery, we used him for references when we went to the orient about 3 years ago and when we came back it was like the earth swallowed him up. No email responses etc, we just figured he changed jobs and moved. None of us ever met his wife, he said he was going to put on a Chinese meal at his home but ???
He was here for dinner before we went to the orient, Hoke couldn't figure it out either.

I know nothing about the issues involved.
 
I sent Thor his email address. I contacted Bryan a few months ago about Asian restaurants in Vancouver and he responded promptly.
