I've been through Santiago twice but was never able to get outside of the airport. I found it interesting that the only places that were open before 8 AM were a shop to buy sunglasses (they opened at 5 AM) and a very nicely stocked wine shop (6 AM). I guess the Chileans have figured out how to take care of their visitors' needs for everything except coffee.
I've got some friends in Chile in the wine biz who I'd be happy to ask for restaurant recs on your behalf.

That's strange you haven't had any information of value in years.
