Not sure at all how miso or soy get close to supplanting rind, but wtf. In my experience, soy sauce is much more easily detectable than miso, but of course there are many kinds of both, not to mention amounts. If you really want umami of that sort, I think nam pla is the quickest route.

Ian, it took me a long time to figure that one out. Fortunately, these days, we have such resources as internet search engines. I would puzzle it out a bit: "Not So F*cking ..." what? But I was barking up the wrong tree.

Reminds me of when I used to read "foodie" sites and they would use the acronym "FOH" for "front of house." Then a friend sent me an email regarding someone he didn't like and referred to the person as being "FOS." I thought: front of what?
