When older Chablis is on, it's where it's at

95 Defaix Lechet Hairspray nose, cream pie, butter, chicken stock, a little spearmint, nice acid lift and thrust, classic tertiary 1er Chablis. No oxidaxation to speak of. It makes me so sad that premox is forcing me to drink through younger stuff - I could drink this every night.

How come almost every wine I drink from Rosenthal is so stinking good?
 
I smell hairspray in the wine all the time. I'm the only person I know who does. I'm special. It's a WIMPIE thing.
 
Of course I can't know exactly what you're talking about, but sometimes I get a 'chemically' odor that reminds me of hairspray (or spray deodorant or cleaning products) in white wine, and it's usually not a good sign for my palate. Can't speak to the precise chemicals though.
 
92 Defaix (forget the exact bottling) at an age of 10-12 was a revelation, particularly because I had been made to believe it was a bad vintage in Chablis. It did strike me as a wine which may never had the concentration to impress when young, but at maturity it was classic.
