'05 l'opera des vins Concerto d-Oniss

2005 l'opera des vins Concerto d-Oniss, alc 13%...clearly frizzante with almost a selzer water characteristic....it really has good fruit and a smooth journey across the palate...the finish becomes a bit sweeter then some quinine abruptly stops it....the middle is so enjoyable that the unusual nature of the wine is not offensive...quite interesting...still young...
 
We always have the option of dissipating the CO2 by shaking vigorously, like I'm told they do in Paree, but somehow I never get around to doing it.

I know that Sparky Marquis has a "shake" method (in a vain attempt to improve his wines)...haven't heard of it being used here

So that's what the boys are doing after the championship basketball games. I always wondered what that was all about.
