We made a great dinner at the TGJP in Paris last friday with five reds Bandol 1998 (Tempier, Pradeaux, Lafran-Veyrolles, Tour du Bon & Gaussens).

gougères au vieux Comté & guacamole + Givry Masse 2005 Clos de la Brulée + Givry Joblot 2006 En veau

Surprised to hear you drinking white Burgundy and also surprised to see guacamole making its way into gougères. But, even though you didn't mention the results, I can see that being a very synergistic food/wine pairing.
 
The gougeres made very good buddy for the Chardonnay. Guacamole was served with carrots, just for fun (garlic, tabasco...).
White burgundy was a test and a bad one. We will coming back soon to Loire, but next dinner will be about Languedoc-Roussillon.
