Thanks Pete, we have one, but I didn't understand how to control the fuel burn rate to sustain combustion over an 8+ -hour period. Bill's response gives me a foothold.

Ian, The process, even with Bill's careful execution, is not fool-proof so don't blithely assume your fire will not escalate or go out.

yes. all tasted at same meal.

09 clos st-jacques - has everything, earth, fruit, tannins. plush on the palate, but retaining its structure. all @ elegance tied with vigor.

08 g-c aux echezeaux - 1st thing, gorgeous tannis. fruit still hiding, but delicious. acid is perfect. wowee!

08 g-c clos st-jacques - deeper, more substantial tannins. deeper everything. somewhat closed, but to me obvious that this will rock. ROCK. all the parts, even now, form a wholeness that is amazing to experience.

98 g-c les cherbaudes - tack room plus so much more. tannins still standing at attention, but in the most delicious way. acid is seemless. like cary grant walking in to a room in a smoking jacket.
