Alas, we had to forego natural because the latitude (23) was not conducive, despite the usual attempt to compensate with altitude (760m); in other words, we had to intervene (c-section). Selection was massale, so extraction was not cryo; ripeness was good, without supermaturity. The final result was sweet, but we didn't acidify. At this stage of maturity lactic notes abound (surprising, given the age of of the wood). Somewhat reminiscent of Bdx, but we don't anticipate a dumb phase.
