Wild Mushroom Ragout Pairing Suggestions

Looks like a good match with a Zin!

I don't know if you're focusing on the red pepper flakes and tomato paste here, but that seems a bit robust for some beautifully delicate mushrooms. Perhaps one of those 20 year old Ridge zins.

A Zin looks just right considering these aspects of the dish: visual, aromatics, ingredients, texture, complexity, and everything else.

Perfect pairing with a Zin, at least according to my atrophied palate!

well, it would've been perfectly lovely with the delicious 2002 grivot nsg boudots I drank tonight - a delicious wine, I might add.

I went with a 95 Verset. It worked very well. There were several things on the table and it seemed that all of them worked. Including a 74 D'Angelo Aglianico.

I ignored the anti-Bourgogne sentiment and went with a 2009 Ninot Mercurey that showed a little closed but paired nicely. Thanks for the idea for the dish.
