This wine is so primary it tastes like a cup of fresh wine still macerating on the skins, pips, stems, and all. It is weighty and tactile, but carries its weight with ease. Perhaps just a bit exaggerated for all that material, but the balance is impeccable, and I'm putting this on hold.

Well beyond primary, the fruit is generous and open, accompanied by wonderful earth tones, sous-bois, some very soft leather. This is in a perfect place right now, and the reason why we cellar our wines.

The last bottle of a much-abused case picked up for a song many years ago, many bottles of which went for cooking wine. This one was not so badly ullaged. The top of the cork was intact and provided a good seal (the bottom kind of crumbled). So, the wine was good, deep golden and all in tertiary flavours of baked fruit, caramelized honey ever-so-slightly burnt, a touch of toasted almond. The last of the bottle held up rather well for a couple of days afterward. A Henry Cavalier Selection - Specially Selected by Macy's. "Personally tasted at the grower's cellar."

I remember you brought this to the first Huet-a-thon back in '00. Not its best showing.

Always sad to see the last of a Huet go from the cellar. I don't know if I can drink a last bottle. I may just have to keep my last bottles in there in perpetuity.
