Riesling Tutorial - food dishes??

One last question (probably?)!

I have my own notions as to what food dishes do and do not pair well with Spatlese Riesling but would like to expand my scope.

What food dishes are classic or well suited with typical Spatlese Rieslings?

What food dishes should be avoided with typical Spatlese Rieslings?

Any especially compelling matchups?

Riesling at that level is made IMO for all things porky. Moo Ping from a Thai restaurant rocks with Riesling (sorry, David!) and a good roast pork loin doesn't suck either. Sauces aren't a big problem and neither are slightly sweet and/or sour flavors. If you didn't live in the land of BBQ brisket, I'd also suggest a match with good BBQ ribs, which in my world means dry rubbed and hickory smoked.

What Mark said. Pork is generally my first choice.

Caramelized onion tart can be pretty magical too and it's one of the better matches out there for many cheeses.
 
Riesling is a great partner to any number of Indian creations, even if they don't contain pork.

I do a braised pork butt with hoisin and garlic/chili sauce that is a fabulous match with bigger spatlese and auslese.
 
Thanks, great suggestions! None are surprises!

As an attempt at summary, it appears that Spatlese Rieslings typically pair well with most non-beef dishes that aren't overrun with things like tomatoes, heavy sauces, and the like. (To the extent that a general summary can be proferred!!)

For mature non-trocken Spaetlese a braised deer roast is also excellent. In Germany typically served with something sweet, such as poached pears and wild cranberry jam.
 
The best Spatlese Riesling matches that I can recall were
--cream of parsnip soup garnished with crab and shredded apple;
--classic Chinese Dungeness crab with ginger and spring onions.

That said, there are a lot of nice pairings for this type of wine: many soft-rind cheeses, creamy root vegetables, pork in a variety of guises as above, rabbit with mustard, chanterelle mushrooms, almost anything involving coconut milk and not too much capsicum.
