NWR Sushi Dreams

Saw this today. Just awesome. Not only for its documentary and slice-of-life vectors but as a meditation on excellence and on guanxi.
 
Paid $5.99 to watch this "on demand" tonight. Completely worth it. I would like to go there but the movie made me feel that I am not yet worthy. I need to study sushi for some time before it would be appropriate to dine there.

The movie paired well with some lesser sushi and 2010 F. Cotat Sancerre Chavignol Rosé. First time I have tried it and, man, this is absolutely my favorite rosé to date. There was an oxidative note when I pulled the cork that had me initially worried, but it quickly faded into an ethereal lightness that was a perfect counterweight to the movie. Never tried a rosé with a finish like this. Everything just came together for this wine tonight. Wow.
 
2005 is nice now.

It's a good movie. I'm not enamoured of the son's place. Haven't eaten at the father's, and it's become more difficult to get a reservation after the movie. My understanding is that the relationships between the master and his disciples (sons or otherwise) are all somewhat strained. There's not that much superficial abuse (physical or verbal), but there's an immense amount of psychological pressure - the constant need for approval, the stratified hierarchy, the discipline and the lack of rest. Tough gig.

That would be a long time to go without talking to you. What if I need advice about some old Huet in the interim? Anyway, I doubt my meager stash will last that long, but maybe I'll put a bottle in offsite storage to prevent myself from opening it impulsively.

This has been in and out of my glass this weekend as well. Possibly even better than your bottle as there were no oxidative notes whatsoever from the start. This is how a rose should be, pale salmon in colour, with subtle suggestions of flowers, mineral, cherry and red citrus, perfectly integrated acidity throughout, balancing out very modest sweetness. Don't recall ever tasting such a perfect young pink.

2000 Francois in my glass is incredible. I am tripping here dude. Why didn't you tell me to age these things before ? This is how I have to find out, through the webz?
