2001 Æppeltreow “Appely” Sparkling French-style cider, 9%, bottle #1834 of 4006. Powerful sur-lie aromatic note on pour, diminishes after 5 minutes or so, but does not come close to disappearing. Plenty of cider variety character on the nose (Kingston Black?), with firm Lyman’s Large Summer skin and quince notes, faint whiff of butterscotch. Same fruit impressions on the palate, crisp, dry, good carbonation (3+ atmospheres?), tannins round and recognizable but showing their days, though the acidity is assertive and in balance all the way through the finish. Grown up but not feeling tired in the least. Will deeply disappoint Woodchuck fans.
