2000 Cappellano and Cavallotto

I was craving some relatively older baroli and these are two of the wines I picked from storage, together with the Massolino Rionda which I will have a week from today.

The Capellano Rupestris was very burgundian - an impression probably framed by the fact that the night before I had the 1999 Jadot Les Baudes. For hours, the wine was dominated by forest floor notes and was extremely acidic, exactly like the Jadot, which developed some nice chalky, Cornas-like notes. It took the better of 6 hours for it to pull things together a bit and balance out the acidity and tannins. A nice wine, but probably I did not give it enough time (age or decant) to properly appreciate its qualities. So wait, or open more than 6 hours before consuming.

The Cavallotto San Giuseppe was a completely different thing. Polished but with immediate nebbiolo typicity; a bit simple in the beginning; but then after 4 hours it gains volume becoming a wine with full, candied - but not cooked!!! - fruit, that perfectly balances the wine's structure. Perfectly enjoyable now with enough time, and easily a candidate to hold for years. Just lovely. It's initial polish reminded me of Vajra. You know what, based on the last sips, this is a beautiful wine!
