Guggenheim is a must, as are pintxas and Txakolina in Bilbao. El celler de Can Roca in Girona is also highly recommended.

In El País Vasco, I'd try to visit Ameztoi and Gurrutxaga. VS has gone on record in favor of Itsas Mendi and Talai Berri.

Your route will likely take you through La Rioja and Navarra, so pick your favorite producers in those regions.

Personal recs from a similar trip a few of years ago.

Bilbao pintxos: La Vina, El Globo, Cafe Iruna for the lamb kebab grilled in the bar area.
Bilbao restaurant: Victor Montes -- try the bacalao pil pil or the pig's trotter stuffed with foie gras.

Outside of Bilbao, Asador Etxebari is a must. A grilling master and well known at this point -- but grilled oysters and smoked butter and other season ingredients are brilliantly done.

On the way to San Sebastian -- Getaria get a reservation at Elkano -- all about the local fish. Order the Kokotxa (thoast of hake fish), gooseneck barnacles, and a talbot.

Fantastic hotel on the French side of the Basque Country in the hills -- L'Auberge Basque.

San Sebastian -- tons of three star Michelin restaurants -- Mugaritz and Arzak are two of the tops. Even more pintxos options around town, each with their own specialty.

For pintxos in San Sebastian: A Fuego Negro for contemporary style pintxos; Bernardo Jatetxea for fried salted peppers, morcilla, anchovies and calamares in their own ink; Txepetxea for anchovies; Goiz Argi
for shrimp on a skewer and morcilla; Bar Martinez for fried pintxos. So many more recs...

Also in San Sebastian, hit the Mercato de la Bretxa and check out the meat and fish selections on show.

In Barcelona -- Inopia is gone, but the Adria's new hot place is Tickets. Quimet and Quimet is a fun spot for tapas, but is well known now. Tapac 24 is a classic tapas place and the even more obvious Cal Pep and the fancy Bar Mut. Must hit the Boqueria Market -- and while you are they grab chick peas and morcilla and other bites at Pinotxo Bar. Negroni was a fun cocktail spot when I was there. Alkimia is the contemporary cuisine restaurant that everyone's hitting. For buying some wine, check out Vila Viniteca.

If in need of lunch between Bilbao and San Sebastian: Asador Basusta in Zumaia. Phenomenal fish, and an entertaining view of ships refitting or being built in the port.

The grilled oysters at Asador Etxebari is probaably my favorite ever. Their grilled peas are also high on the list. I've been there twice.
