Summer Vacation - St. Chinian & Collioure

I will be spending a couple of weeks in the Languedoc this summer, specifically July 14-28, first week in St. Chinian and the second in Collioure, and finishing it off with a couple of days in Barcelona. the recent post on Barcelona has been helpful and yes, "search" is my friend. Not looking to do any trophy hunting (no Celler de Can Roca), but not hoping to catch something interesting that might be overlooked.

Any tips, info or gossip will be greatly appreciated.

I have sometimes liked the Thierry Navarre wines from St. Chinian. I have never been in person, but if you're going to be there anyway, it might be worth checking to see if you can visit.
 
Old Collioure is just fantastic stuff - Parce etc., esp. the Mourvedre cuvee - I would wonder about restaurants with deep lists - might be a lot of fun.
