Denis had a free hand with the SO2. To please modern hipster palates the wines must be decanted well in advance.

With the prior bottles, double-decanting for three hours or so has been enough to do the trick. This one needed more.
 
The last bottle of '95 was really weird for the first couple of hours - likely due to the SO2 - it was eventually gorgeous...this time around, the '95 seemed good to go right after opening...either there is huge so2 variation or variation in the way it was consumed over time :).
