Thick and ripe with gritty structure. It took effort to down a glass.

Then the wine did an amazing transformation at the 2 hour mark.
I was smiling, all seemed right again.

That was my experience over the last year. They really needed air to come round.

At least in my case, it was most definitely not experienced as a bullet. But everyone's mileage varies.

I blame Jamie for making these NYers think that wine needed to be all old and dried out before it is "ready".

the fatsink doesn't care for fripperies such as cradles. upending is quite sufficient.
